Currently I'm running one, but changing to two next year, three doesn't seem like it's worth it due to the minor bump you get for the money when adding a third card (no offence).

Plus my MB can only handle two in SLI, three if I went Tri-Fire, but I'll probably stick with the nVidia chipsets.

Probably will keep to single, maybe if vram stacked with this sort of thing but it doesn't (That won't be until the R9 300 series). By the time an R9 280 is insufficient, one of the better 300s would go for under $200.

Well i actually ran into a dilemma, because i will be going full LCS soon and the blocks for 3 cards cost as much as a card itself...

Now i wish i had 1 very powerful card instead of 3 averagely good cards

I'm using a single Sapphire Tri-X OC R9 290 (or something) and it's been serving me well for over a year now. I don't see a reason to switch to a Crossfire or SLI setup yet, it's running all my games at 144Hz and 1080p smoothly with high details.
